Kirsty, thank you for your comment. There are a nubemr of reasons to limit chicken, the primary one being that we simply don't need to consume the amount of meat, both beef and poultry, that we do. There are many other sources for vitamins and nutrients, including protein. More specifically, it's what's in the chicken that you don't want to eat. The anti-biotics and other drugs administered to chickens in order to maintain them in the conditions they (briefly) live in are being indirectly administered to you when you eat them. This is one of the reasons anti-biotics are becoming increasingly less effective for us. Chicken meat sold in supermarkets is basically contaminated, containing high levels of bacteria, including E. Coli, and arsenic, which can cause cancer and dementia, among other unpleasant ailments. If that's not enough to put one off chicken, the high cholesterol is another good reason to choose healthier alternatives. I still find myself eating chicken despite all that once or twice a month, usually in a restaurant, but it's a compromise. Once we accept that meat does not need to be a part of our daily diet, we might see more variety on the menu. Thanks again, Kirsty. Greg
